Melissa Clark’s One-Pan Creamy Pasta with Bacon, Eggs, Vegetables and Herbs
This copious dinner melissa clarkthe new cookbook, dinner in one, takes a cue from traditional spaghetti carbonara but loads it up with veggies and cooks it all in one pan. “It’s just as creamy as the classic version, but a lot more colorful and a little lighter,” says Clark.
To make it without meat: Substitute 8 oz diced mushrooms for bacon, allowing mushrooms to brown well before adding onion.
